As with many of the wonderful salads we eat, we grow most of the vegetables on our property. This fresh salad includes fresh radishes picked right from our garden this morning and a perfectly ripe avocado, picked from one of our trees a few days ago. It also includes some freshly picked and chopped chives.
No special equipment is needed for the preparation of this salad.
For the Tzatziki Salad Dressing:
1 Cucumber, peeled and coarsely shredded
½ cup of plain Greek Yogurt
½ cup of Sour Cream
¼ cup of Lemon Juice
1 clove of Garlic, minced
½ teaspoon of Dill Weed
½ cup of Feta Cheese, crumbled
Salt and Black Pepper, to taste
For the Radish and Cucumber Salad:
1 cup of Radishes cleaned and sliced
1 cup of Cucumber, sliced and cut into quarters
½ cup of marinated Artichoke Hearts, chopped into pieces that are about the same size as the radish slices and the cucumber pieces
¼ cup of Feta Cheese, crumbled
1 Avocado, cubed
1 tablespoon of Chives, finely chopped
½ cup of Pita Chips, broken into bite-sized pieces
To Prepare the Tzatziki Salad Dressing:
Put all the ingredients in a food processor and pulse them until they are fully integrated.
To Prepare the Radish and Cucumber Salad:
Toss these ingredients together in a salad bowl.
